Zucchini Noodles (Zoodles)

Light, fresh, and versatile, zucchini noodles are a quick and healthy pasta alternative. Make them with a spiralizer, peeler, or mandoline and dress them up with endless flavors.

Ingredients
  

  • 2 medium zucchini washed and ends trimmed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • salt and pepper to taste
  • parmesan cheese or toppings of choice optional garnish

Instructions
 

  • Rinse zucchini, trim ends, and spiralize or peel into noodle shapes. A spiralizer makes curly noodles, while a vegetable peeler creates wide ribbons.
  • Place zucchini noodles in a colander. Sprinkle lightly with salt and let sit for 5 minutes. Pat dry with a towel to remove excess moisture.
  • Heat olive oil in a skillet over medium heat. Add garlic and sauté 1 minute until fragrant.
  • Add zucchini noodles to skillet. Cook 2–3 minutes, tossing gently, until just tender. Avoid overcooking to prevent sogginess.
  • Season with salt and pepper. Serve immediately with parmesan or your favorite sauce.

Notes

For variety, toss zucchini noodles with pesto, peanut sauce, or even carbonara-style toppings. They can also be enjoyed raw in salads.
