Instructions
Rinse zucchini, trim ends, and spiralize or peel into noodle shapes. A spiralizer makes curly noodles, while a vegetable peeler creates wide ribbons.
Place zucchini noodles in a colander. Sprinkle lightly with salt and let sit for 5 minutes. Pat dry with a towel to remove excess moisture.
Heat olive oil in a skillet over medium heat. Add garlic and sauté 1 minute until fragrant.
Add zucchini noodles to skillet. Cook 2–3 minutes, tossing gently, until just tender. Avoid overcooking to prevent sogginess.
Season with salt and pepper. Serve immediately with parmesan or your favorite sauce.
Notes
For variety, toss zucchini noodles with pesto, peanut sauce, or even carbonara-style toppings. They can also be enjoyed raw in salads.
