Preparation

  • In a mixing bowl, combine the Greek yogurt, salsa, red wine vinegar, olive oil, honey, and season with salt and pepper. Stir until well-combined.
  • In a large serving bowl, place the chopped romaine lettuce as the base.
  • Add in the thawed corn or drained canned corn, gently folding it into the lettuce.
  • Incorporate the chopped red bell pepper and diced zucchini into the bowl. Mix gently to avoid mushiness.
  • Cut the avocado in half, remove the pit, and scoop the flesh out. Chop into bite-sized pieces and add to the salad.
  • Cook the bacon until crispy, then chop it into small pieces. Sprinkle over the salad.
  • Drizzle the prepared dressing over the salad and toss gently to coat.
  • Top with French’s Fried Onions right before serving.

Notes

For best results, adjust the dressing to your taste and add the avocado just before serving to maintain freshness.
