  • 1 32 oz. Container of Chicken Broth Adds moisture and depth
  • 1 8 oz. Block of Cream Cheese Creates creaminess
  • ¼ Cup Half & Half or Heavy Cream Adds richness

Instructions
 

Preparation

  • In a bowl, mix together the salt, pepper, cumin, chili powder, cayenne pepper, and garlic powder until well combined.
  • Place the chicken breasts at the bottom of your slow cooker.
  • Sprinkle the prepared seasonings over the chicken breasts, ensuring even coverage.
  • Drain the beans and corn, then add them to the slow cooker on top of the seasoned chicken.
  • Top with diced onion, then add the drained beans, corn, and Rotel.
  • Pour the container of chicken broth over the ingredients in the slow cooker.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours.
  • Once the chicken is tender, carefully remove it and shred it using forks.
  • Return the shredded chicken back to the slow cooker.
  • Add cream cheese and half & half (or heavy cream) to the slow cooker, stirring until fully incorporated.
  • Cook on high for another 15 minutes.

Serving

  • Serve the chili hot with your favorite toppings.

Notes

Use freshly shredded cheese as a topping for added flavor. Adjust spice levels by varying cayenne pepper. Allowing the chili to sit after cooking can enhance flavors. Ensure the chicken is submerged in broth for even cooking.
