Instructions
 

Preparation

  • Begin by heating the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion to the pot and sauté until it softens and becomes translucent, about five minutes.
  • Stir in the minced garlic and cook for about a minute to release its fragrance.

Cooking

  • Add the shredded chicken, drained and rinsed white beans, diced green chilies, chicken broth, cumin, oregano, chili powder, salt, and black pepper to the pot. Stir well.
  • Bring the mixture to a gentle boil, then reduce heat to low and simmer uncovered for 20 minutes.
  • Stir in the sour cream and shredded cheese until fully incorporated.
  • Taste and adjust seasoning with more salt or pepper as desired.

Serving

  • Ladle the chili into bowls and garnish with fresh cilantro and lime wedges before serving.

Notes

For a thicker chili, allow it to simmer longer to evaporate moisture. Don't rush the sautéing process for optimal flavor.
