Preparation

  • Begin by heating a large pot over medium heat. Add the chopped onion and minced garlic, stirring frequently until they soften, about 3-5 minutes.
  • Once the onion and garlic have softened, add the diced chicken. Cook for 5-7 minutes, stirring frequently, until the chicken is no longer pink.

Cooking

  • Stir in the white beans, diced green chiles, chicken broth, ground cumin, oregano, and chili powder. Mix well to combine the ingredients.
  • Bring the mixture to a boil over medium-high heat. Once bubbling, reduce the heat to a gentle simmer, allowing the chili to simmer for 20-30 minutes, stirring occasionally.
  • During the last 5 minutes of simmering, stir in the corn and heavy cream, enhancing the creaminess and sweetness.
  • Season the chili with salt and pepper to taste. Adjust according to preference.
