Instructions
 

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the finely diced onion, stirring occasionally as it cooks until softened and translucent (about 7 to 8 minutes).
  • Stir in the minced garlic and the diced green chilis, and continue sautéing for 2 to 3 minutes.
  • Mix in the spices: cumin, dried oregano, paprika, salt, and black pepper.

Cooking

  • Gradually add in 2 cups of low sodium chicken broth, great northern beans, corn, and shredded rotisserie chicken, adjusting the broth for desired consistency.
  • Let everything simmer for a few minutes before blending 1 to 1 ½ cups of the mixture until smooth.
  • Return the blended mixture back to the pot and let it simmer gently over low heat for 10 to 15 minutes.
  • Adjust the consistency with more broth if needed, and then stir in the lime juice.

Serve

  • Serve the chili hot, garnished with fresh cilantro, diced avocado, and tortilla chips.

Notes

To retain a fresh flavor, add lime juice just before serving. Store leftovers in an airtight container for 3 to 4 days or freeze for up to 3 months. Reheat gently with added broth if needed.
