Main Ingredients

  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 cans green chiles 4 oz each, diced
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 2 cups cooked chicken shredded (rotisserie works great)
  • 2 cans white beans drained and rinsed (cannellini or great northern)
  • 2 cups chicken broth
  • 1/3 cup sour cream or cream cheese your choice, for creaminess
  • 1 lime juiced

Optional Toppings

  • fresh cilantro chopped
  • avocado sliced
  • jalapeños sliced

Instructions
 

  • Heat oil in a large pot over medium heat. Sauté diced onion and garlic until soft and fragrant.
  • Add green chiles, cumin, and oregano. Cook for 1-2 minutes to let the flavors develop.
  • Stir in shredded chicken, white beans, and chicken broth. Bring to a simmer.
  • Simmer for about 10 minutes. Mash some beans with the back of a spoon to thicken the chili.
  • Stir in sour cream or cream cheese until smooth and creamy. Add lime juice. Season with salt and pepper to taste.
  • Serve hot with your favorite toppings: cilantro, avocado, jalapeños, shredded cheese, or tortilla chips.

Notes

This chili is easy to adapt. Try leftover turkey, extra veggies, or your preferred level of heat. Freezes beautifully and gets better the next day.
