Ingredients
  

Classic Vegetable Pasta

  • 12 oz spaghetti or penne
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 zucchini sliced
  • 1 red bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • salt and pepper to taste
  • 1 tsp Italian seasoning
  • Parmesan cheese for serving (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain pasta.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  • Add zucchini, bell pepper, and cherry tomatoes. Cook for 5–7 minutes until just tender.
  • Stir in fresh spinach and cooked pasta. Toss together, adding reserved pasta water as needed to create a light sauce.
  • Season with salt, pepper, and Italian seasoning. Serve with Parmesan cheese if desired.

Notes

Try adding mushrooms, peas, sun-dried tomatoes, or roasted eggplant for extra variety. Use whole grain or gluten-free pasta for a healthy twist. Store leftovers in the fridge for up to 3 days.
