This creamy, garlicky tomato Boursin pasta combines roasted cherry tomatoes and soft Boursin cheese for a quick yet gourmet pasta dish. Perfect for weeknights or entertaining, it’s rich, tangy, and ready in under 30 minutes.
Preheat oven to 400°F (200°C). In a baking dish, add cherry tomatoes, garlic (if using), olive oil, salt, and pepper. Roast for 20 minutes until soft and caramelized.
Meanwhile, bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
Add Boursin cheese to the hot baking dish with roasted tomatoes. Stir gently until melted and creamy.
Add cooked pasta to the tomato-Boursin mixture along with a splash of reserved pasta water. Toss to coat evenly and adjust consistency as needed.
