  • 12 oz pasta penne, fusilli, rigatoni, or spaghetti
  • 2 cups cherry or grape tomatoes
  • 1 block Boursin cheese Garlic & Fine Herbs (5.2 oz)
  • 2 tbsp olive oil
  • 2 cloves garlic minced (optional)
  • salt and pepper to taste
  • fresh basil or parsley for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). In a baking dish, add cherry tomatoes, garlic (if using), olive oil, salt, and pepper. Roast for 20 minutes until soft and caramelized.
  • Meanwhile, bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
  • Add Boursin cheese to the hot baking dish with roasted tomatoes. Stir gently until melted and creamy.
  • Add cooked pasta to the tomato-Boursin mixture along with a splash of reserved pasta water. Toss to coat evenly and adjust consistency as needed.
  • Garnish with fresh basil or parsley. Serve hot with optional Parmesan.

Notes

For added protein, stir in grilled chicken or shrimp. Make it spicy with red pepper flakes, or add sautéed spinach for extra greens. Store leftovers in the fridge for up to 3 days.
