  • 2 cans great northern beans (15 oz each), rinsed and drained for creaminess
  • 1 can chicken broth (14.5 oz) for moisture
  • 1 Medium yellow onion, chopped for sweetness
  • 1 tsp salt for seasoning
  • 1 tsp ground cumin for warm flavor
  • ½ tsp black pepper for mild spice
  • ¾ tsp cayenne pepper for a bit of heat
  • 1 cup sour cream for creaminess
  • ½ cup heavy cream for richness
  • 1 tbsp vegetable oil for cooking

Preparation

  • Begin by rinsing the chicken to ensure it’s clean. Take a moment to remove any visible fat for a leaner dish. Once cleaned, cut the chicken into bite-sized cubes.
  • Heat the vegetable oil in a stockpot over medium heat. Add the cubed chicken and sprinkle in the garlic powder. Cook until the chicken is no longer pink, about 6-8 minutes.
  • Add the rinsed and drained great northern beans, chicken broth, chopped green chilies, and all the seasonings to the pot. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to a simmer. Leave uncovered for about 30 minutes.
  • After 30 minutes, remove the pot from heat. Stir in the sour cream and heavy cream until fully blended.
  • Return the pot to low heat and let it simmer for an additional 5 minutes.
  • To serve, ladle the thick and creamy chili into bowls. Top each serving with shredded cheddar and an extra dollop of sour cream if desired.

Notes

This recipe is versatile; consider adding vegetables like corn or bell peppers or spicy elements like additional cayenne or hot peppers. Store leftovers in an airtight container for 3-4 days or freeze for up to three months.
