Ingredients
  

Marinade

  • cup balsamic vinegar adds acidity
  • 2 Tbsp. honey provides sweetness
  • 2 Tbsp. oil (avocado or olive oil) ensures moisture
  • 2 cloves garlic, minced enhances flavor
  • 1 tsp. Italian seasoning adds a blend of herbs
  • 1 Tbsp. Dijon mustard provides tang

Chicken and Skewers

  • 2 lb. boneless, skinless chicken breasts, pounded to even thickness ensures uniform cooking
  • 2 Tbsp. avocado oil for grilling

Vegetables and Garnish

  • 8 oz. grape tomatoes, halved adds juiciness
  • 8 oz. fresh mozzarella balls contributes creaminess
  • 2 Tbsp. finely chopped fresh basil adds freshness

Preparation

  • Start by preparing the marinade. In a medium bowl, combine the balsamic vinegar, honey, and selected oil. Whisk these together until you achieve a smooth blend.
  • Add the minced garlic, Italian seasoning, and Dijon mustard to the bowl. Stir these ingredients into the marinade until they’re evenly incorporated.
  • Pound the chicken breasts to an even thickness and cut them into bite-sized pieces.
  • Place the chicken pieces into the bowl with the marinade. Ensure all the chicken is coated.
  • Allow the chicken to marinate for at least 15 to 30 minutes.
  • Prepare your wooden skewers by soaking them in water for about 20 minutes.

Cooking

  • After marination, thread the chicken pieces onto the skewers, alternating with the halved grape tomatoes and fresh mozzarella balls.
  • Heat the grill pan over medium-high heat and add the avocado oil.
  • Place the skewers onto the pan and cook, turning occasionally, until the chicken is cooked through, about 10-12 minutes.
  • Remove the skewers from the grill and let them rest for a few minutes.
  • Sprinkle the skewers with chopped fresh basil before serving.

Notes

Ensure even thickness when pounding chicken and avoid overcrowding the grill pan.
