Ingredients
  

Bread and Spread

  • 12 slices Bread (white or whole grain) Use even slices for uniform sandwiches.
  • 8 oz Cream cheese Ensure it's at room temperature for easy spreading.
  • 1/4 cup Fresh herbs (like dill or chives) Mince finely to distribute flavor.
  • 1 tsp Salt For seasoning.
  • 1/2 tsp Pepper For seasoning.

Filling

  • 1 cup Roasted red peppers Use a moderate amount to avoid heaviness.
  • 1 medium Cucumber Slice thinly for crunch.

Preparation

  • Wash and dry the cucumber and fresh herbs. Slice the cucumber thinly and mince the herbs.
  • In a mixing bowl, combine cream cheese, herbs, salt, and pepper. Blend until smooth.
  • Lay out the slices of bread, optionally trimming the crusts for a traditional look.

Assembly

  • Spread the herbed cream cheese mixture on one side of each slice of bread.
  • Layer roasted red peppers on half of the bread slices.
  • Add cucumber slices on top of the roasted peppers.
  • Place the remaining slices of bread on top, cream cheese side down, and gently press.
  • Cut each sandwich into quarters or halves.
  • Arrange on a serving platter and enjoy!

Notes

Use fresh herbs for better flavor and toast the bread lightly for texture. Prepare the cream cheese a few hours ahead for deeper flavor. Cut sandwiches just before serving.
