  • 1 cup Pineapple Juice Use good-quality juice without added sugars
  • 0.25 cup Soy Sauce
  • 0.33 cup Brown Sugar Can substitute with a sugar alternative
  • 0.25 cup Sweet Chili Sauce Adjust for spice preference
  • 1 teaspoon Fresh Ginger (or 1/4 teaspoon Dried Ginger)
  • 1.5 teaspoon Cornstarch

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces and pat them dry with paper towels.
  • Sprinkle the chicken with salt and pepper to season.

Cooking Chicken

  • Heat a large skillet over medium-high heat and add a splash of oil.
  • Once the oil is hot, add the chicken in a single layer and cook for about 6 to 8 minutes, stirring occasionally, until no longer pink.

Prepare Sauce

  • In a pot, combine pineapple juice, soy sauce, brown sugar, sweet chili sauce, cornstarch, and ginger.
  • Stir well to dissolve the cornstarch and heat over medium heat until it comes to a gentle simmer, about 5 minutes.

Combine Chicken and Sauce

  • Once the chicken is cooked, reduce heat and pour the sauce over the chicken.
  • Toss gently until the chicken is well coated.

Finish

  • Fold in the fresh pineapple slices and stir until heated through.
  • Garnish with fresh cilantro and nuts if desired before serving.

Notes

For best results, ensure the chicken pieces are thoroughly dried before cooking to achieve a nice sear. Adjust the level of sweet chili sauce to taste and use fresh pineapple for best flavor.
