Instructions
 

Cooking the Chicken

  • Start by heating the olive oil or sesame oil in a large skillet over medium heat.
  • Season the chicken pieces with salt, pepper, and garlic powder.
  • Add the seasoned chicken to the skillet and cook until golden brown, about 6 to 8 minutes.

Preparing the Mango Glaze

  • In a mixing bowl, combine the chopped mango (or mango purée), soy sauce, honey or maple syrup, rice vinegar or lime juice, minced garlic, grated ginger, and chili flakes.

Coating the Chicken

  • Once the chicken is fully cooked, pour the mango glaze mixture over the chicken in the skillet.
  • Stir well to coat and let the glaze bubble and thicken slightly.
  • Mix cornstarch and water to create a slurry, then add it to the skillet, stirring constantly.

Serving

  • Once the glaze has thickened, remove the skillet from heat and serve the chicken with rice or noodles.

Notes

Serve with steamed broccoli or fresh salad. Leftovers can easily be reheated.
