  • 8 oz Cream Cheese (softened) Ensure it's at room temperature for blending.
  • 4 tbsp Unsalted Butter (softened) Bring to room temperature for easy mixing.
  • 1 cup Granulated Sugar Adds sweetness to the candy.
  • 1/2 cup Brown Sugar Provides rich flavor.
  • 2 cups Shredded Coconut Use unsweetened for best results.
  • 1 tbsp Vanilla Extract For aromatic flavor.
  • 1 tsp Ground Cinnamon Adds warm spice.

Preparation

  • Take the cream cheese and unsalted butter out of the refrigerator to soften at room temperature for about 30 minutes.
  • In a mixing bowl, combine the softened cream cheese and unsalted butter. Use an electric mixer to beat until smooth and fluffy, about 2 to 3 minutes.
  • Gradually add the granulated sugar and brown sugar while mixing until well blended and creamy.
  • Fold in the shredded coconut with a spatula until evenly distributed.
  • Pour in the vanilla extract and ground cinnamon, mixing until combined.
  • Line a baking sheet with parchment paper. Scoop out small portions of the mixture, shape into balls or patties, and place them on the prepared sheet.
  • Cover the sheet with plastic wrap and refrigerate for at least an hour to firm up the candy.
  • Once chilled, let the candy sit for a few minutes at room temperature before serving to enhance creaminess.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for about a week. Can be frozen for up to three months.
