Preparation

  • Begin by placing your boneless, skinless chicken breasts or thighs in the bottom of the crockpot.
  • Chop the bell peppers, onion, and garlic. Layer these vegetables on top of the chicken.
  • In a mixing bowl, combine the pineapple (including the juice), soy sauce, honey, ketchup, and rice vinegar. Mix well.

Cooking

  • Pour the sauce over the layers in the crockpot ensuring everything is well-coated.
  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
  • Once cooked, shred the chicken using two forks directly in the crockpot.
  • To thicken the sauce, mix cornstarch with cold water to create a slurry and stir this into the sauce in the crockpot.
  • Let it mix for an additional 10-15 minutes.

Serving

  • Scoop the chicken and sauce over a bed of rice or noodles.
  • Garnish with sesame seeds, green onions, or cilantro before serving.
