Cooking

  • Start by heating a large skillet over medium heat and adding the olive oil. Allow it to warm slightly for a minute.
  • Carefully place the bite-sized pieces of chicken breasts into the skillet in a single layer. Cook the chicken for about 5-7 minutes, stirring occasionally until they turn golden brown and are cooked through with no pink remaining in the center.
  • While the chicken is cooking, prepare the sauce. In a mixing bowl, combine the pineapple chunks, pineapple juice, soy sauce, honey, minced garlic, grated ginger, red pepper flakes, salt, and black pepper. Stir well until all ingredients are blended together thoroughly.
  • Once the chicken is cooked, pour the sauce over the chicken in the skillet. Stir to coat the chicken evenly and let it simmer for about 5 minutes until the sauce thickens and glazes around the chicken.
  • In a small bowl, whisk together the cornstarch and water until smooth. Gradually add this mixture to the skillet while stirring to thicken the sauce further.
  • Allow the chicken and sauce to cook together for another couple of minutes until everything is well combined and heated through.
  • Remove the skillet from heat and taste the dish, adjusting any seasonings as necessary. Serve hot, garnished with sliced green onions and sesame seeds if desired.

Notes

Serve with steamed rice or stir-fried vegetables for a balanced meal. Leftovers can be enjoyed cold or reheated as a snack.
