  • 1 tablespoon fresh lime juice
  • 1 teaspoon chili powder

Instructions
 

  • Rinse and cook 1 cup rice according to package instructions. Fluff and keep warm.
  • Season chicken breasts with salt, pepper, and chili powder. Grill or pan-sear 5–6 minutes per side until 165°F. Rest 5 minutes, then slice.
  • In a mixing bowl, combine corn, mayonnaise or yogurt, lime juice, cotija cheese, smoked paprika, and garlic powder. Stir until evenly coated.
  • Assemble bowls with rice, sliced chicken, and street corn mix.
  • Top with cilantro, avocado, jalapeño, or pickled red onion. Serve immediately with extra lime if desired.
