  • 1 tsp chili powder
  • Salt and pepper to taste

  • 1 piece lime (cut into wedges)
  • 3 cups cooked rice
  • Fresh cilantro (for garnish)

Preparation

  • In a mixing bowl, combine lime juice, avocado oil, chili powder, garlic powder, salt, and black pepper. This mixture will coat the chicken thighs, infusing them with flavor. Ensure the chicken is fully covered with the marinade, then refrigerate for about 15 to 30 minutes.

Cooking the Chicken

  • Heat a skillet over medium-high heat. Cook marinated chicken thighs for 8 to 10 minutes on each side until thoroughly cooked. Set aside to rest for a few minutes before slicing.

Preparing the Street Corn Topping

  • In a mixing bowl, combine sweet corn, red onion, sour cream, mayonnaise, cotija cheese, and additional chili powder. Stir until well mixed, then taste and adjust seasoning with salt, pepper, and lime juice as needed.

Reheating Rice

  • Reheat cooked rice with a splash of water until warm and fluffy.

Assembling the Bowls
