Ingredients
  

For the chicken

  • 600 g boneless, skinless chicken breast or chicken thigh, cut into bite-sized pieces Choose your preferred cut for flavor.
  • 1 tsp sweet paprika Adds mild earthiness.
  • 1 tsp garlic powder For aromatic depth.
  • ½ tsp sea salt flakes Enhances flavor.
  • ½ tsp freshly cracked black pepper Adds subtle heat.
  • 1 piece egg Binds the coating.
  • 60 g cornflour (cornstarch) Creates a crispy crust.
  • Oil for frying Oil, for frying Provides moisture and cooking medium.

For the sauce

  • 1 tsp freshly minced garlic Adds fresh flavor.
  • 1 tsp freshly minced ginger Provides warmth.
  • 125 ml sweet chili sauce Adds sweetness and spice.
  • 60 ml tamari or all-purpose soy sauce Adds umami.
  • 60 ml rice wine vinegar, plain white vinegar, apple cider vinegar, or lime juice For acidity.

To serve

  • Steamed rice Steamed rice to serve Complements the dish.
  • 1 piece spring onion (scallion), finely sliced For garnish and freshness.
  • 1 tsp sesame seeds For crunch.

Instructions
 

Preparation

  • Cut your boneless, skinless chicken breast or thighs into bite-sized pieces.
  • In a large bowl, combine the sweet paprika, garlic powder, sea salt flakes, and freshly cracked black pepper.
  • Add the diced chicken pieces to the bowl and toss gently until all pieces are evenly coated.
  • Crack the egg into the bowl with the chicken and stir well.
  • Sprinkle the cornflour over the egg-coated chicken while mixing.

Cooking

  • Heat oil in a deep frying pan or skillet over medium heat.
  • Carefully add the chicken pieces in batches, frying until golden brown and fully cooked.
  • In another pan, sauté the minced garlic and ginger in a bit of oil over medium heat.
  • Add the sweet chili sauce, tamari or soy sauce, and vinegar to the garlic and ginger. Simmer until it thickens slightly.
  • Transfer the fried chicken to paper towels to drain excess oil.
  • Add the fried chicken to the sauce mixture and toss gently to coat.

Serving

  • Plate the Sticky Sweet Chili Chicken over a bed of steamed rice.
  • Garnish with finely sliced spring onion and sesame seeds.

Notes

Ensure your oil is hot before frying for a crispy exterior. Fry in batches to maintain oil temperature. Adjust sauce sweetness to taste.
