  • 2 cups uncooked rice base for the bowl
  • 2 small heads broccoli, chopped adds color and nutrition

  • 1/4 cup rice vinegar adds acidity
  • 3 cloves garlic, minced brings aromatic flavor
  • 2 tbsp sriracha for heat and tang
  • 2 tsp sesame oil adds nutty richness
  • 1 tsp ground ginger contributes warmth
  • 2 tsp arrowroot powder mixed with 2 tbsp water to make a slurry for thickening the sauce

For Serving

  • 1/2 cup mayo for the spicy drizzle
  • 2-3 tbsp water to adjust mayo consistency
  • Sesame seeds for topping for garnish and crunch

Instructions
 

Preparation

  • Start by cooking the rice based on the package instructions. After it’s done, set it aside.
  • While the rice is cooking, season the chicken breasts with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.

Cooking Chicken

  • Heat the olive oil in a skillet over medium heat and cook the seasoned chicken until it’s golden brown and fully cooked through.
  • Ensure the chicken reaches an internal temperature of 165°F and has a nice golden crust.

Making the Sauce

  • In a separate bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, and ground ginger until well combined.
  • Once the chicken is cooked, pour the sauce over it in the skillet and allow it to simmer, stirring occasionally.
  • Stir in the arrowroot slurry until the sauce thickens and becomes sticky.

Cooking Broccoli

  • Prepare the chopped broccoli by steaming or roasting it until tender.

Making the Spicy Drizzle

  • Mix mayonnaise, sriracha, and enough water to achieve a smooth consistency for the spicy drizzle.

Assembling the Bowls

  • Start with a base of rice, then layer the sticky chicken, followed by the steamed or roasted broccoli.
  • Drizzle with the spicy mayo and finish with a sprinkle of sesame seeds.

Notes
