Ingredients
  

For the marinade

  • 1 cup pineapple juice adds moisture and sweetness
  • ½ cup low sodium soy sauce provides salty umami flavor
  • ¼ cup packed brown sugar contributes sweetness and depth
  • 2 tablespoons honey adds sweetness and shine
  • 2 tablespoons rice vinegar or apple cider vinegar balances flavor
  • 1 tablespoon sesame oil adds nuttiness and richness
  • 3 cloves garlic, minced enhances flavor
  • 1 tablespoon fresh ginger, grated adds warmth and spice
  • ½ teaspoon crushed red pepper flakes optional for heat

For cooking

  • 2 lbs boneless skinless chicken thighs tender meat
  • 1 tablespoon cornstarch optional for thickening
  • 2 tablespoons water to create slurry

For garnishing

  • 2 green onions sliced for garnish
  • Sesame seeds for garnish
  • Pineapple slices or chunks grilled or fresh, optional for serving

Instructions
 

Preparation

  • In a large bowl, combine pineapple juice, low sodium soy sauce, brown sugar, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and crushed red pepper flakes, if using. Whisk these ingredients together until well blended.
  • Add the boneless skinless chicken thighs to the bowl with the marinade. Ensure they are coated thoroughly and allow to marinate for at least 30 minutes, or longer if possible.

Cooking

  • Heat a skillet or frying pan over medium heat. Add the marinated chicken thighs, reserving any excess marinade. Cook the chicken for about 6 to 7 minutes on each side until golden brown and juices run clear.
  • For a thicker sauce, combine cornstarch and water in a small bowl to create a slurry. After the chicken cooks, pour the reserved marinade into the pan, let it simmer, and add the cornstarch slurry while stirring.
  • Once the sauce reaches desired thickness, remove from heat. Slice the chicken into bite-sized pieces or serve it whole.

Serving

  • Serve the sticky chicken over rice, quinoa, or a salad. Garnish with sliced green onions and sesame seeds. Add fresh or grilled pineapple on the side if desired.

Notes

Best enjoyed fresh, but can make for an excellent lunch the next day. Consider variations with different vegetables or protein options like shrimp.
