Instructions
 

Cooking Chicken

  • Start by heating a skillet over medium heat. Prepare the chicken breasts by trimming any excess fat.
  • Add the olive oil to the skillet. Once shimmering, place the chicken breasts into the skillet.
  • Cook for about 6 to 7 minutes on one side until golden-brown. Flip the chicken carefully, then pour the hot buffalo sauce over them.
  • Continue to cook for another 6 to 7 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing.

Assembling the Bowls

  • Chop the cherry tomatoes and slice the avocado.
  • Begin assembling the bowls with cooked brown rice as a base.
  • Top with sliced buffalo chicken, corn, black beans, and cherry tomatoes.
  • Add sliced avocado and sprinkle crumbled blue cheese, if using.
  • Drizzle ranch dressing over the assembled bowls before serving.

Notes

These bowls can be enjoyed as a lunch or breakfast. Store leftovers in an airtight container for up to four days. For variations, consider sautéed bell peppers or quinoa instead of rice.
