  • 1/4 cup pickle relish (sweet or dill) contributes tanginess and moisture

  • 2 hard-boiled eggs chopped adds richness and protein
  • 1 tsp. celery salt enhances flavor
  • Salt and black pepper, to taste adjusts overall seasoning

  • Begin by poaching the boneless, skinless chicken breasts in a large pot of water until fully cooked through and tender, then allow to cool and dice into approximately 2-inch cubes.
  • While the chicken cools, cut the celery stalks and sweet onion into 2-inch pieces.
  • In a large mixing bowl, combine the diced chicken, celery, and onion, folding them together gently.
  • Incorporate the sweet or dill pickle relish into the mixture, ensuring it's evenly distributed.
  • Add the mayonnaise, starting with half a cup and mixing thoroughly, adjusting for creaminess as desired.
  • Chop the hard-boiled eggs and fold them into the mixture gently.
  • Season the salad with celery salt, salt, and black pepper, tasting and adjusting as needed.

Notes

Ensure the chicken is cooked just right to avoid dryness. Chill the salad briefly before serving for enhanced flavors. Adjust the quantity of mayonnaise based on preference.
