Instructions
 

Preparation

  • Begin by heating a drizzle of olive oil in a large skillet over medium heat.
  • Season the chicken breasts generously with salt, pepper, garlic powder, onion powder, and smoked paprika.
  • Add the seasoned chicken breasts to the skillet and sear for about 5-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.

Making the Sauce and Rice

  • In the same skillet, melt 2 tablespoons of unsalted butter.
  • Gradually whisk in 1 ½ cups of whole milk and 2 cups of chicken broth until smooth.
  • Stir in 1 cup of long-grain white rice, ensuring all rice is submerged.
  • Return the cooked chicken breasts to the skillet, nestling them on top of the rice.
  • Cover the skillet and let it simmer on low until the rice is tender and has absorbed liquid.
  • Once done, remove from heat and sprinkle with ½ cup shredded cheddar cheese and ½ cup grated Parmesan cheese.
  • Garnish with chopped parsley before serving.

Notes

Ensure chicken is patted dry before seasoning for better browning. Adjust seasoning before serving, and let the dish rest after cooking for best results.
