Ingredients
  

For the Sauce

  • 1/2 cup mayo adds creaminess

For the Tacos

  • 1 pound ground beef, 80/20 provides flavor and juiciness
  • 3/4 teaspoon kosher salt seasons the beef
  • 1/4 teaspoon ground black pepper enhances beef flavor
  • 6 slices American cheese melts smoothly
  • 6 pieces flour tortillas, street taco size wraps fillings
  • shredded lettuce adds texture and freshness

  • optional toppings: bacon, white onions adds flavor and texture

Instructions
 

Preparation

  • In a mixing bowl, combine the mayo, ketchup, chopped dill pickles, garlic powder, pickle juice, soy sauce, rice vinegar, paprika, kosher salt, and ground black pepper. Stir everything together until the mixture is well combined.
  • In another bowl, mix the ground beef with kosher salt and ground black pepper. Use your hands to combine the seasonings into the meat gently.

Cooking

  • Preheat your large skillet over medium-high heat. Portion the seasoned ground beef into equal servings and place the meat balls into the pan.
  • After a minute, use a spatula to smash each beef ball down flat in the skillet. Cook for about 2 to 3 minutes until browned on one side.
  • Flip each smashed burger over and place a slice of American cheese on top. Cover the skillet and let them cook for an additional couple of minutes.
  • Warm the flour tortillas in a separate skillet or microwave until pliable.

Assembly

  • Assemble each taco by placing a cheesy smashed burger on a tortilla. Add shredded lettuce and any optional toppings.
  • Serve the tacos immediately for the best experience.

Notes

These tacos are best enjoyed fresh. Any leftovers can be stored in an airtight container for up to three days. Reheat them properly to restore texture.
