Ingredients
  

Main Ingredients

  • 1 lb chicken breasts or thighs trimmed
  • 2 cans white beans drained and rinsed
  • 1 can diced green chiles
  • 1 onion diced
  • 1 bell pepper diced
  • 3 cups chicken broth

Seasonings

  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp chili powder optional

Optional Add-ins

  • 1 cup corn kernels optional
  • 1/2 cup cream cheese or Greek yogurt softened
  • 1 lime juiced, for serving
  • cilantro for garnish

Instructions
 

  • Dice the onion and bell pepper. Trim chicken breasts or thighs.
  • Place chicken at the bottom of the slow cooker. Add white beans, diced onion, and bell pepper on top.
  • Add green chiles, cumin, oregano, garlic powder, and chili powder (if using). Pour chicken broth over until just covered.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours.
  • Remove chicken and shred with two forks. Return shredded chicken to the slow cooker.
  • Stir in cream cheese or Greek yogurt until fully incorporated and creamy.
  • Serve with toppings like cheese, avocado, tortilla strips, cilantro, or lime juice.

Notes

Make a double batch and freeze for future meals. Adjust spice level to your preference. Always stir in dairy at the end to prevent curdling.
