Instructions
Dice the onion and bell pepper. Trim chicken breasts or thighs.
Place chicken at the bottom of the slow cooker. Add white beans, diced onion, and bell pepper on top.
Add green chiles, cumin, oregano, garlic powder, and chili powder (if using). Pour chicken broth over until just covered.
Cover and cook on low for 6β7 hours or high for 3β4 hours.
Remove chicken and shred with two forks. Return shredded chicken to the slow cooker.
Stir in cream cheese or Greek yogurt until fully incorporated and creamy.
Serve with toppings like cheese, avocado, tortilla strips, cilantro, or lime juice.
Notes
Make a double batch and freeze for future meals. Adjust spice level to your preference. Always stir in dairy at the end to prevent curdling.
