Equipment

  • Slow Cooker

Ingredients

Main Ingredients

  • 1.5 lbs chicken breasts fresh or frozen
  • 2 cans white beans drained and rinsed
  • 1 jar salsa verde about 16 oz
  • 1 can diced green chilies
  • 2 cups chicken broth
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 4 oz cream cheese softened

Instructions

  • Add chicken breasts, white beans, salsa verde, green chilies, chicken broth, garlic, cumin, and onion powder to the slow cooker.
  • Place cream cheese on top and cover with the lid.
  • Cook on low for 6–7 hours or on high for 3–4 hours, until chicken is cooked through and tender.
  • Shred the chicken with two forks directly in the slow cooker.
  • Stir to combine everything well. Serve hot with your favorite toppings.

Notes

Customize it with extra veggies, different beans, or more spice. Leftovers store well and taste even better the next day. Cream cheese makes it irresistibly creamy—don’t skip it!
