Preparation

  • Begin by preparing your chicken thighs. Place the 3 pounds of boneless skinless chicken thighs into the slow cooker, arranging them evenly.
  • In a small bowl, combine the paprika, salt, garlic powder, onion powder, black pepper, and crushed red pepper flakes.
  • Sprinkle the spice mix over the chicken thighs, rubbing the seasonings into the chicken.
  • Zest and juice the lemon, then combine both with the chicken in the slow cooker.
  • Add the minced garlic to the slow cooker, stirring gently to combine with the chicken and lemon mixture.
  • Slice the butter and distribute it over the chicken.
  • If using, place the lemon slices on top of the chicken.
  • Cover the slow cooker and set it to cook on low for approximately 6-8 hours.

Serving

  • Check the chicken for doneness; it should be tender and easy to shred with a fork.
  • Transfer the chicken to a serving dish and garnish with chopped fresh parsley, if desired.
