Preparation

  • Begin by rinsing the chicken breasts or thighs under cold water. Pat them dry with paper towels.
  • Season the chicken pieces generously with salt and black pepper on all sides.
  • In a small bowl, combine the dried oregano, melted unsalted butter, minced garlic, lemon zest, and lemon juice. Whisk until mixed well.

Cooking

  • Pour the lemon garlic butter mixture over the seasoned chicken in the slow cooker, ensuring each piece is well coated.
  • Add the chicken broth into the slow cooker, surrounding the chicken. Stir gently.
  • Cover the slow cooker with the lid and set it to cook.
  • Meanwhile, mix the cornstarch with water in a small bowl until fully dissolved. Set aside.
  • When the chicken is tender, carefully transfer it to a plate, covering it to keep warm.
  • Stir the cornstarch mixture into the remaining juices in the slow cooker, turn the slow cooker to high and let the sauce thicken slightly.
  • Once thickened, return the chicken to the slow cooker to coat it in the sauce.
  • Transfer the chicken to a serving dish, spooning the sauce generously on top, and garnish with fresh parsley.

Notes

For best results, ensure chicken pieces are similar in size and consider searing briefly before adding them to the slow cooker.
