  • 2 lbs Chicken Breasts or Thighs protein source, tender texture
  • Salt & Black Pepper basic seasoning
  • 1 tsp Dried Oregano herb flavor
  • ½ cup Unsalted Butter (melted) rich moisture
  • 4 cloves Garlic (minced) aromatic flavor
  • 2 Lemons (zest and juice) bright acidity
  • ½ cup Chicken Broth liquid for moisture
  • 1 tsp Onion Powder additional flavor
  • 1 tbsp Cornstarch thickening agent
  • 1 tbsp Water to mix with cornstarch
  • Fresh Parsley (for garnish) fresh color

Instructions
 

Preparation

  • Season the chicken breasts or thighs with salt and black pepper on all sides.
  • Sprinkle the dried oregano over the seasoned chicken evenly.
  • In a bowl, whisk together the melted unsalted butter, minced garlic, lemon zest, and lemon juice.
  • Pour the butter mixture over the seasoned chicken in the slow cooker.
  • Add the chicken broth to the slow cooker and stir gently to mix with the butter mixture.

Cooking

  • Cover and cook the chicken on low for about 4 to 6 hours until tender.
  • Once cooked, remove the chicken from the slow cooker and shred into bite-sized pieces.

Thickening Sauce

  • Combine cornstarch and water to create a slurry, then pour back into the slow cooker.
  • Stir well and let it sit until the sauce reaches the desired consistency.

Serving

  • Serve the shredded chicken hot, spooning the buttery lemon garlic sauce over it.
  • Garnish with chopped fresh parsley.

Notes
