Preparation

  • Place the chicken breasts in the slow cooker, arranged flat or in a single layer.
  • In a bowl, combine the honey, soy sauce, minced garlic, and grated ginger. Stir until smooth.
  • Pour the honey garlic mixture over the chicken, ensuring it is well-coated.
  • Add the chopped bell pepper, broccoli florets, sliced carrots, and snap peas on top of the chicken and sauce.
  • Season with salt and pepper to taste.
  • Cover the slow cooker and cook on low for several hours.
  • If a thicker sauce is desired, mix cornstarch with water to create a slurry and add it to the slow cooker in the last half hour of cooking.
  • When ready, serve the chicken and vegetables, drizzling some honey garlic sauce over them.

Notes

For best results, cut vegetables uniformly, taste the sauce before serving, and adjust seasonings as needed. Consider marination for extra flavor, and only open the lid when necessary to maintain heat.
