Preparation

  • Place the boneless chicken thighs or breasts into your 6-quart slow cooker in a single layer.
  • In a medium bowl, whisk together soy sauce, honey, tomato paste, cornstarch, sriracha, rice vinegar, toasted sesame oil, and minced garlic until smooth.
  • Pour the honey garlic sauce over the chicken, ensuring all pieces are evenly coated.

Cooking

  • Cover the slow cooker and cook on low for 5 to 6 hours or on high for 4 hours, until the chicken reaches an internal temperature of 165 degrees F.
  • Once the chicken is done, remove it from the slow cooker and shred or slice it.
  • Return the chicken to the crock pot and toss it in the remaining sauce.

Serving
