  • 1 medium sweet or yellow onion, thinly sliced
  • ½ cup chicken broth (or bone broth)
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil (extra virgin)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Instructions
 

Preparation

  • Begin by placing the chicken thighs in the bottom of the slow cooker.
  • Add the thinly sliced onions over the chicken.
  • In a small mixing bowl, combine the chicken broth, lemon juice, olive oil, minced garlic, oregano, thyme, sea salt, and black pepper. Whisk these ingredients together until well blended.
  • Pour the prepared mixture evenly over the chicken and onions in the slow cooker.

Cooking

  • Cover the slow cooker and set it to cook on LOW for 5-6 hours or on HIGH for 3-4 hours.
  • The chicken is ready when it is tender and reaches an internal temperature of 165°F.

Serving

  • Once the chicken is done cooking, shred it directly in the slow cooker or remove to slice.
  • Serve the dish over cooked rice, in warm pitas, or alongside fresh vegetables with optional toppings.

Notes

Ensure the chicken is coated well with the broth mixture for maximum flavor. Adjust herbs according to your taste.
