  • 2 breasts boneless skinless chicken breasts tender texture
  • 1 can (11-oz) corn, drained adds sweetness and moisture
  • 1 can (15-oz) black beans, drained and rinsed earthy flavor and protein
  • 1 can (10-oz) diced tomatoes and green chilies, undrained liquid base and zesty flavor
  • 2 cups chicken broth liquid for consistency
  • 1 cup cooked chopped bacon adds smoky flavor and richness
  • 1 package (1-oz) ranch dressing mix seasoning blend
  • 1 tsp cumin adds warm, earthy flavor
  • 1 Tbsp chili powder for spicy warmth
  • 1 tsp onion powder provides savory flavor
  • 1 package (8-oz) cream cheese for creamy texture and richness
  • 1 cup shredded cheddar cheese for mellow flavor and creaminess

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the slow cooker.
  • Add the drained corn, black beans, diced tomatoes with green chilies, chicken broth, cumin, chili powder, onion powder, ranch seasoning, and chopped bacon into the slow cooker and stir to combine.
  • Place the cream cheese on top of the mixture without stirring.

Cooking

  • Cover the slow cooker and cook on LOW for 6 to 8 hours.
  • Carefully remove the chicken and shred it into bite-sized pieces.
  • Return the shredded chicken to the slow cooker and stir in the shredded cheddar cheese.

Notes

Ensure you drain the black beans and corn. If short on time, cut the chicken into smaller pieces. Adjust spice levels as needed.
