Instructions
 

Preparation

  • Heat a large skillet over medium heat and add the ground beef or ground turkey, breaking it up as it cooks until browned.
  • Drain and rinse the black beans under cold water, then add them to the slow cooker with the cooked meat.
  • Add the diced tomatoes to the slow cooker, including their juices.
  • Add the frozen mixed vegetables directly into the slow cooker.
  • Add the diced potatoes to the slow cooker.
  • Sprinkle the taco seasoning over the mixture and stir gently to combine.
  • Season with salt and pepper to taste.

Cooking

  • Set the slow cooker on low and cook for several hours until the potatoes are tender and the casserole is cooked through.

Notes
