For the Casserole

  • 1 lb ground beef (or ground turkey) Browned before use
  • 1 can black beans Drained and rinsed
  • 1 can diced tomatoes
  • 2 cups frozen mixed vegetables Or fresh vegetables
  • 3 cups diced potatoes Fresh or frozen, cut into even pieces
  • 1 cup shredded cheese Cheddar or your choice
  • 1 each onion Chopped
  • 1 packet taco seasoning
  • to taste salt and pepper

Preparation

  • Begin by browning the ground beef or turkey in a skillet over medium heat until no longer pink. Drain and set aside.
  • In a slow cooker, combine the drained black beans and diced tomatoes. Stir gently to mix, then add the ground meat.
  • Add the frozen mixed vegetables or your choice of fresh vegetables, folded into the mixture until well incorporated.
  • Incorporate the diced potatoes into the slow cooker, ensuring they are similarly sized.
  • Sprinkle the taco seasoning along with salt and pepper to taste over the mixture and stir gently.

Cooking

  • Cover the slow cooker and set to cook until the vegetables are tender and potatoes are cooked through, about 5-7 hours on low or 3-4 hours on high.
  • Once cooking is complete, sprinkle the shredded cheese on top and let it melt for a few minutes before serving.
  • Gently stir the casserole or serve directly from the slow cooker.

Notes

Adjust seasoning to personal taste before serving. For extra heat, add chopped jalapeños or hot sauce. Leftovers can be reheated easily and stored in an airtight container.
