Preparation

  • Place the boneless, skinless chicken thighs at the bottom of the slow cooker.
  • Chop the carrots, celery, and onion uniformly and sprinkle them over the chicken.
  • Pour in the chicken broth, making sure it covers the vegetables and meat.
  • Add the cream of chicken soup and stir gently to combine.
  • Sprinkle the thyme and parsley over the mixture and stir to distribute.
  • Season with salt and pepper to taste.
  • Cover the slow cooker and set it to cook until the chicken is fully cooked and tender.

Finalizing the Soup

  • Once ready, transfer the cooked chicken to a cutting board and shred it using two forks.
  • Return the shredded chicken to the slow cooker and stir it back into the soup.
  • Open the can of biscuit dough and place the biscuits on top of the soup.
  • Cover the slow cooker again and cook until the biscuits are golden and cooked through.

Notes

For deeper flavor, sauté the onions and vegetables before adding them to the slow cooker. To prevent soggy biscuits, serve them immediately after cooking. Adjust thickness by modifying chicken broth amounts.
