Preparation

  • Begin by preparing your chicken breast. Cut into chunks for even cooking or leave whole.
  • Drain and rinse black beans under cool water to remove excess sodium, then add them to the slow cooker.
  • Open and drain corn, then add to the slow cooker.
  • Add diced tomatoes (with juices) into the slow cooker, stirring gently to combine.
  • Pour buffalo sauce over the combined ingredients, mixing well.
  • Sprinkle ranch dressing mix over the top and stir to ensure even distribution.
  • Add garlic powder and onion powder, stirring well to mix flavors.
  • Season with salt and pepper to taste, then cover and cook on low for 6-8 hours until chicken is tender.

Notes

Use low-sodium ingredients for better flavor control. For optimal flavor, ensure chicken is fork-tender before shredding. Adjust the heat level by varying the amount of buffalo sauce and garnish with green onions or cheese.
