- 2 lbs beef chuck roast or stew meat cut into bite-sized pieces
- 4 cups broccoli florets fresh or frozen
- 1/2 cup soy sauce low sodium recommended
- 1/2 cup beef broth
- 3 cloves garlic minced
- 2 tbsp brown sugar
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- 1 tbsp sesame oil optional, for flavor
Place beef pieces, soy sauce, beef broth, garlic, and brown sugar in the slow cooker. Stir to coat.
Cover and cook on LOW for 6 hours (or HIGH for 3–4 hours) until beef is tender.
In the last 30 minutes, stir in broccoli florets.
Mix cornstarch with water to create a slurry. Stir into the slow cooker and cook an additional 30 minutes until sauce thickens.
Stir in sesame oil if using, then serve hot over rice, noodles, or in tortillas.
Swap broccoli for green beans, peppers, or cauliflower. Add carrots, mushrooms, or onions for more veggies. For spice, add sriracha or red pepper flakes. This recipe freezes well for up to 2 months.
