Instructions
 

Preparation

  • Cut the beef chuck into 1-inch cubes and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat and brown the beef cubes in batches for about 4-5 minutes per side.
  • Transfer the browned beef to the slow cooker.
  • Sauté chopped onions in the same skillet until translucent, then add minced garlic and cook for 1 minute. Transfer this mixture to the slow cooker.
  • Add sliced carrots and quartered mushrooms to the slow cooker.
  • Pour in the red wine and scrape the skillet to capture all flavors, then add the beef broth and tomato paste.
  • Add dried thyme and bay leaf, stirring gently to mix well.

Cooking

  • Cover the slow cooker and set it to cook on low for 6-8 hours until the beef is fork-tender.

Serving

  • Taste and adjust seasoning before serving. Discard the bay leaf and garnish with freshly chopped parsley.
  • Serve hot, pairing with crusty bread or creamy mashed potatoes.

Notes

For added depth, let the beef marinate in the wine overnight. Avoid overcrowding when browning beef and use good quality wine to preserve flavor.
