  • 6 boneless, skinless chicken thighs choose similar size for even cooking
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 onion medium, chopped
  • 1 tsp paprika
  • 1 tsp salt adjust based on broth saltiness
  • 0.5 tsp black pepper freshly ground for best flavor
  • 1 lemon juice only
  • 0.5 cup chicken broth low-sodium preferred

Instructions
 

  • Pat chicken thighs dry. Rub with salt, pepper, paprika, and a small amount of olive oil to help seasoning stick.
  • Heat remaining olive oil in a skillet over medium-high. Sear chicken thighs for 4 minutes per side until golden brown.
  • Add garlic and onion. Stir for 2 minutes until softened and fragrant.
  • Pour in chicken broth and lemon juice. Reduce heat to low, cover, and simmer for 20 minutes until chicken is cooked through (165°F internal temp).
  • Remove from heat and let rest for 5 minutes. Serve warm with your favorite sides.

Notes

You can swap lemon juice with honey or orange zest for a sweet twist, or add cream and mushrooms for a cozy version. These thighs also bake well at 400°F for 25–30 minutes. Leftovers stay juicy and reheat well.
