  • 2 cups Chicken Broth (or vegetable broth)
  • 1 cup Marinara Sauce
  • 2 tbsp Tomato Paste
  • 1 cup Heavy Cream
  • 1 lb Ground Chicken (or turkey, pork, or beef)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 4 cups Spinach (or kale or Swiss chard)
  • 1 cup Cherry Tomatoes (halved)
  • 2 tbsp Olive Oil
  • 1 tbsp Italian Seasoning (or oregano or basil)
  • 1 tsp Salt (adjust to taste)
  • 1 cup Mozzarella Cheese (grated)

Instructions
 

Cooking the Pasta

  • Begin by cooking the pasta according to the package instructions in a large pot. Drain and set it aside, reserving a little pasta water.

Sautéing the Vegetables

  • In a skillet, heat the olive oil over medium heat and add the diced onion. Cook for about 3-4 minutes until translucent.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant.

Browning the Chicken

  • Introduce the ground chicken, breaking it apart. Cook for 6-8 minutes until browned and fully cooked.

Creating the Sauce

  • Stir in the chicken broth, marinara sauce, and tomato paste. Bring to a gentle simmer for about 5 minutes.
  • Pour in the heavy cream, add the Italian seasoning and salt. Stir well and simmer for a few more minutes.

Finishing Touches

  • Fold in the spinach and cherry tomatoes. Cook for 2-3 minutes until the spinach wilts.
  • Combine the cooked pasta with the sauce. Toss until mixed, adding reserved pasta water if needed.
  • Top with grated mozzarella cheese and allow to melt slightly before serving.

Notes

This dish can be made ahead and reheated. Store leftovers in an airtight container for 3-4 days or freeze for 2-3 months. Use fresh ingredients for best results.
