Ingredients
  

Pasta and Sauce Base

  • 12 oz Pasta (your favorite shape) Cook according to package instructions.
  • 2 cups Chicken Broth (or vegetable broth)
  • 1 cup Marinara Sauce
  • 2 tbsp Tomato Paste
  • 1 cup Heavy Cream Can substitute with half-and-half.

Protein and Vegetables

  • 1 lb Ground Chicken (or turkey, pork, or beef)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 4 cups Spinach (or kale or Swiss chard) Greens can be swapped based on availability.
  • 1 cup Cherry Tomatoes (halved)

Seasoning and Toppings

  • 2 tbsp Olive Oil (for sautéing)
  • 1 tbsp Italian Seasoning (or oregano or basil)
  • 1 tsp Salt (adjust to taste)
  • 1 cup Mozzarella Cheese (grated) For serving.

Instructions
 

Cooking Pasta

  • Cook the pasta in a large pot of salted boiling water according to package instructions, stopping just before reaching al dente. Drain and set aside.

Making the Sauce

  • In the same pot, heat olive oil over medium heat and sauté the diced onion for 3-5 minutes until translucent.
  • Add minced garlic and cook for another minute until fragrant.
  • Incorporate the ground chicken, breaking it apart, and cook until no longer pink (about 5-7 minutes).
  • Mix in the tomato paste and Italian seasoning. Cook for another minute.
  • Pour in chicken broth and marinara sauce, bringing to a gentle simmer for about 5 minutes.
  • Slowly stir in heavy cream, allowing to heat through for another minute.
  • Add spinach and halved cherry tomatoes, cooking until spinach wilts (about 2-3 minutes).
  • Return the cooked pasta to the pot, tossing to combine with the creamy sauce. Adjust consistency with more broth if needed.
  • Serve warm, topped with grated mozzarella cheese.

Notes

For the best results, simmer the sauce before adding cream. Store leftovers in an airtight container and refrigerate for up to 3 days or freeze for up to 3 months.
