Preparation

  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the finely chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook until fragrant, about 30 seconds.
  • Add the uncooked orzo to the skillet and stir for about 1 minute.

Cooking

  • Pour in the chicken broth and season with salt and pepper. Bring to a gentle boil.
  • Reduce heat, cover the skillet, and cook for 8 minutes, stirring occasionally.
  • Stir in the large shrimp and Italian seasoning. Cover and cook until shrimp turn pink and opaque, about 3-5 minutes.
  • Add lemon zest, lemon juice, Parmesan cheese, and baby spinach. Stir until creamy and well combined.
  • Garnish with chopped parsley and serve.

Notes

Use fresh shrimp for the best flavor and texture. Adjust seasoning to taste, and don't overcook the shrimp.
