Preparation

  • Heat a large skillet or wok over medium-high heat.
  • Add the ground chicken, cooking while breaking it apart until it browns, about a few minutes.
  • Once browned, add the diced red onion and minced garlic, stirring until softened and translucent, about 3-4 minutes.
  • Introduce the sugar snap peas, cooking for another couple of minutes until they are vibrant and still crisp.

Sauce Mixture

  • In a small bowl, whisk together rice wine vinegar, soy sauce, hoisin sauce, sesame oil, ground ginger, and sriracha.
  • Pour the sauce over the chicken and vegetable mixture, stirring to coat evenly.
  • Let it cook for a minute or two to allow flavors to meld.

Final Steps

  • If desired, add the sliced chile pepper for extra heat and cook for another minute.
  • Remove from heat and give everything a final stir before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days in the fridge. Can be frozen for up to 3 months. For a nuttier flavor, sprinkle toasted sesame seeds on top before serving.
