Savory Chicken Thighs with Cheesy Broccoli Orzo Skillet

Ingredients
  

For the chicken

  • 2 pounds bone-in, skin on chicken thighs juicy and flavorful
  • 4 tablespoons olive oil divided, adds richness and helps in cooking

For the skillet

  • 1/2 cup yellow onion, diced for sweetness and aroma
  • 2 cloves garlic, minced enhances flavor with warmth
  • 8 oz dried orzo adds a pleasant bite and heartiness
  • 2 cups low-sodium chicken broth provides moisture and flavor
  • 1 pound broccoli florets, quartered or halved for freshness and texture
  • 1 1/2 cups sharp cheddar cheese, shredded adds creaminess and richness
  • to taste Kosher salt enhances all the flavors
  • to taste Freshly ground pepper adds warmth and depth

Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Place the chicken thighs skin-side down in the skillet and cook until the skin is golden brown, about 5 to 7 minutes.
  • Flip the chicken thighs and add remaining olive oil if the skillet looks dry. Cook for another 5 to 7 minutes until browned.
  • Remove the chicken and set aside. In the same skillet, add the diced onion and sauté for about 2 to 3 minutes until softened.
  • Stir in the minced garlic and sauté for another minute until fragrant, being careful not to burn it.
  • Add the dried orzo to the skillet and stir to combine with onions and garlic.
  • Pour in the chicken broth, stirring well. Bring to a gentle simmer and return the chicken thighs on top.

Cooking

  • Cover the skillet and cook for 10 to 12 minutes, or until the orzo is tender and has absorbed most of the broth.
  • Stir in the broccoli florets and cover again, allowing to steam for 3 to 4 minutes until the broccoli is tender.
  • Sprinkle the shredded cheddar cheese over the top, stir to blend, and season with Kosher salt and pepper to taste before serving.

Notes

Ensure the chicken is pat dry for better browning. Use low-sodium broth to control saltiness. Stir in cheese off heat to prevent clumping.
