  • 1 can (10 ounce) Ro-tel diced tomatoes & green chilies, drained Freshness, acidity
  • 1 can (14 ounce) black beans, drained & rinsed Heartiness, fiber
  • 1 can (12 ounce) corn, drained Sweetness, texture
  • 1/2 teaspoon smoked paprika Smoky flavor
  • 1 cup Mexican cheese blend Creaminess, richness
  • to taste Fresh cilantro, chopped (optional) Herbal freshness

Instructions
 

Preparation

  • Rinse the chicken breasts under cold water and pat them dry with paper towels.
  • Season both sides of the chicken with garlic powder, chili powder, salt, and pepper.

Cooking

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken breasts to the skillet and cook for about 6–8 minutes on each side, until golden brown and internal temperature reaches 165°F.
  • Transfer the chicken to a plate and cover with foil to keep warm.
  • In the same skillet, add the chopped onion and sauté for about 3–5 minutes until translucent.
  • Add the drained Ro-tel diced tomatoes and green chilies, and cook for about 2–3 minutes.
  • Stir in the drained and rinsed black beans, and cook for another 2–3 minutes.
  • Add the drained corn and let it simmer for another 3–4 minutes.
  • Slice the cooked chicken into bite-sized pieces, then return to the skillet, stirring gently to combine.
  • Sprinkle the smoked paprika and Mexican cheese blend over the mixture, cover, and cook for 1-2 minutes until cheese is melted.

Notes

Serve warm or at room temperature. Great for meal prep. Add eggs for breakfast or pair with a fresh salad for lunch.
