Ingredients
  

Fresh Vegetables

  • 3-4 medium zucchini sliced into half-moons
  • 1 onion diced (optional)
  • 2 tomatoes fresh or canned Italian tomatoes, chopped

Herbs, Oils & Cheese

  • 2 cloves garlic minced
  • 2 tbsp olive oil extra virgin preferred
  • 1 tbsp fresh basil or oregano chopped
  • 1/2 cup Parmesan or mozzarella cheese grated

Instructions
 

  • Slice zucchini into half-moons, dice onion, and chop tomatoes.
  • Heat olive oil in a large skillet. Add garlic and onion, cooking until fragrant and onion is translucent.
  • Stir in zucchini and cook until edges are lightly browned.
  • Add chopped tomatoes and basil. Simmer until zucchini is tender but not mushy.
  • Sprinkle cheese on top, cover skillet, and let it melt before serving warm.

Notes

For a lighter twist, replace cheese with dairy-free alternatives or swap pasta sides for zucchini noodles. Don’t overcrowd the skillet to keep zucchini from steaming instead of browning.
