Main Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz egg noodles wide or your choice of pasta
  • 8 cups chicken stock store-bought or homemade
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced (optional)
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tbsp lemon juice fresh
  • salt and pepper to taste
  • fresh parsley or spinach optional, for garnish or added nutrition

Instructions
 

  • In a large pot, sauté onion, carrots, celery, and garlic until softened, about 5 minutes.
  • Add chicken stock and bring to a boil.
  • Stir in egg noodles and cook according to package instructions until just tender.
  • Add shredded rotisserie chicken and Italian seasoning. Simmer 5 more minutes.
  • Stir in lemon juice. Season with salt and pepper to taste. Add spinach or parsley if using.
  • Serve hot. For best leftovers, store noodles and broth separately.

Notes

To avoid mushy noodles, cook them separately and add to bowls just before serving. Freeze soup base without noodles. Reheat gently and stir in freshly cooked noodles for best texture.
